I really enjoy the taste of roasted peppers and this salad is certainly a family favourite. It’s also a very healthy choice, low in calories and a great source of fiber and vitamins A and C. You can serve it as a light meal or a side dish. Yummy, just writing this recipe makes me drool

5licious: Romanian Mamaliga (Polenta)
Mamaliga is a traditional Romanian recipe. It’s a porridge made out of maize flour that is easy to prepare, nutritious and delicious. This is the quick version of the recipe. The traditional one takes longer to make and it’s usually cooked in a cast iron pot (called ceaun or tuci in Romania). It usually turns out so thick than can be cut into slices. But I haven’t had the traditional polenta since the early 2000s when I used to visit my grandma in the countryside. My childhood dishes with polenta are very near and dear to my heart… as a kid I used to love my crushed polenta in a bowl of hot milk or polenta with sour cream and cheese (mamaliguta cu branza si smantana).

Assorted Pickles (Muraturi Asortate)
I miss so much the assorted pickles my dad used to make back home that this year I have decided to try out his recipe. I know it’s a little late in the year but they should be ready in time for the Christmas feast
. I wish I had some green tomatoes (gogonele) to pickle as well but it’s kind of hard to find them in November
. I hope my assorted pickles turn out as good as my dad’s… I’ll let you know in a few weeks

Country-Style Baked Potatoes
This is a very simple dish with a great taste that can be served either as a main course or as a side dish. I know this recipe is about baking potatoes but, the key ingredient that makes this dish so delicious is the smoked bacon added to the sauce that is mixed with the potatoes. I’m not sure why but all guys seem to love bacon
… no wonder this is one of my husband’s favourite dishes.

Potato Salad
I have been making this potato salad for more than 10 years and it is very good. I could eat this every day of the week and be happy! The salad is quite simple, all you need is some peppers, onions, eggs, olives and, of course, potatoes. The dressing is made of sunflower oil and white vinegar and it adds just the perfect touch to the salad. There is no need for mayonnaise or commercially sold dressings to make a tasty salad! Also, because it contains no mayonnaise, it’s a very good choice for picnics and those hot summer days (that we so rarely get in Canada
).

Roasted Vegetables
I’ve made roasted vegetables many times but never took the time to find an actual recipe. I would always make this in a hurry by adding some salt, pepper, olive oil and thyme over the vegetables and then roast them for half an hour or so. Today however, I have decided to search for some recipes (mostly looking for a better dressing) and I found a good one on epicurious.com. I have adjusted the recipe to my taste and availability of ingredients… not something unusual in Roxy’s Kitchen

Stuffed Baked Potatoes
Stuffed baked potatoes make a great appetizer for parties of all kinds and can be prepared ahead of time. They are also a perfect side dish to accompany just about any meal. This is a stuffed potato recipe I learned from our friend’s grandma or “buni” as we all call her
. I baked them in the oven but you could also use a microwave to pre-bake the potato before stuffing; just make sure to pierce a few holes with a fork in each potato so they don’t explode in the microwave.
