I’m a mushroom lover (yeah I know, nothing new here!), they are so tasty and you can make so many dishes with them. Beef Tripe Soup (Ciorba de Burta)
Beef tripe soup (ciorba de burta) is one of the most popular Romanian soups. Pretty much every traditional Romanian restaurant servers this soup. It takes several hours to cook the beef tripe (unless you have a pressure cooker) but it’s definitely worth the effort. It has a distinctive flavour and the beef tripe has a chewy texture that people typically either love or hate. But please don’t hate it before you give it a try, at least once

Duck Noodle Soup
Let me introduce you to our Romanian nourishing and delicious soup (borş) with lovage leaves (leuştean). You can use any kind of meat for this soup. I used duck because we’ve had enough chicken soups over the past months and we prefer vegetable-meat soups. Lovage leaves are used as a herb for flavouring the Romanian sour soups of any kind. Nothing can beat the unique flavour of lovage and you can use it much like you would celery and parsley. It’s fairly difficult to find it here and for this reason I tried growing my own plant in a pot. It grew nicely during the summer but died every winter when I moved it indoors… will try again next year but this time in the back yard, not a pot

Soup with Homemade Egg Noodles
When I was a kid, I used to be such a picky eater (not anymore!). I absolutely despised vegetables, especially the cooked ones. So for this reason, the only soup I used to like was this soup with egg noodles that my grandma and mom used to make. For the traditional recipe, the broth is made by boiling vegetables and chicken and then these are removed from the soup. However, this time I’ve decided to add my own twist to the traditional recipe as you will see below. Hope you’ll enjoy this great soup rich in vitamins and nutrients.

Chicken and Green Pea Stew
This is a very popular dish in Romania, especially during summer time. Since it’s such a simple, healthy and tasty meal, I cook this quite often regardless of the season. Traditionally, it’s a vegetarian stew but, I like adding chicken. One of the key ingredients for this stew is the fresh dill which adds a strong, aromatic and fresh flavour to the dish. I love fresh dill and use a lot for this recipe.
