Lamb Haggis / Terrine (Drob de Miel)
Romanian Lamb Haggis is one of the most popular dishes cooked around Easter. It’s made of minced lamb innards (heart, liver, lungs, kidneys), green onions, eggs, fresh dill and parsley. All these wrapped in a caul (or pasta sheet) and roasted like a meatloaf. We serve it as an appetizer with green onions, tomatoes or you can try it with my mom’s easy and delicious salad (romaine lettuce, red radishes, green onions with an oil and vinegar dressing).

Roasted Lamb with Rosemary and Lots of Garlic
This is a dish for lamb and garlic lovers! The only time of the year when we eat lamb is at Easter. It’s the second year I cooked lamb since we moved to Canada but the first time it actually tasted delicious. This is mainly because we found a very good place to buy fresh Ontario lamb (thanks Alina & Viorel for the suggestion
). I wish you could smell the aroma of garlic and rosemary in the house, it was incredible!

Beef Tripe Soup (Ciorba de Burta)
Beef tripe soup (ciorba de burta) is one of the most popular Romanian soups. Pretty much every traditional Romanian restaurant servers this soup. It takes several hours to cook the beef tripe (unless you have a pressure cooker) but it’s definitely worth the effort. It has a distinctive flavour and the beef tripe has a chewy texture that people typically either love or hate. But please don’t hate it before you give it a try, at least once

Veal with Mushrooms
This is one of the first meals I made in my lovely new kitchen
. It’s a simple yet delicious meal. I found the recipe here (and then adjusted to my taste). You can serve the cutlets with cooked potatoes, rice or salad. It’s the perfect choice for lunch or a light dinner.

Pork Tenderloin with Mushroom Stuffing
This is such a savory recipe with a moist and flavourful stuffing. I found the recipe on mushrooms.ca but I’ve modified it slightly by adjusting the ingredients to my taste (more mushrooms of course!) and adding white wine. Here’s the original recipe. We served it with mashed potatoes and my amazing Beet Salad.

Ground Beef & Pork Lasagna (my best lasagna so far)
Another great recipe from the Italian cuisine… although I must admit this version of Lasagna is more delicious than my other recipe for Lasagna with Chicken and Mushrooms. At least hubby was much more impressed with this one
. It’s not exactly the traditional Italian recipe as I’ve decided to combine ground beef and pork while Italians usually make it using beef only… correct me if I’m wrong. We really enjoyed the way it turned out so I highly recommend you try it at home too.

Beans with Smoked Sausages
I’ve been planning to make beans with smoked sausages for some time and this weekend I finally managed to do so. This recipe is very easy but it might take more time to get your meal ready… it all depends whether you choose to soak the beans or not. I’ve always soaked beans as I find it cuts cooking time and the beans usually turn out to be tenderer (not always though!). If you cook the beans in tap water that is hard your beans may never get tender. Many other cooks suggest that you don’t necessarily have to soak them, that it’s all just a matter of preference. Stuffed Peppers
I haven’t made stuffed peppers in ages even though they are pretty easy to make and we like them a lot. Stuffed with ground pork and/or beef, rice, tomato paste and seasonings, stuffed peppers (ardei umpluti) are very popular in Romania and they are usually served as a main dish. They are also quite popular in many of the Eastern European countries although depending on the region the recipe may be slightly different.
