I’m a mushroom lover (yeah I know, nothing new here!), they are so tasty and you can make so many dishes with them. The other day I realized that I have many recipes with mushrooms but no soups so I decided to make this light and tasty Cream of Mushroom Soup. Grilled Chicken, Asparagus and Mushrooms Sandwich
Asparagus is in season this month! Actually, in Ontario, May is the prime asparagus growing season so make the most out of it while you can. As I mentioned in my previous post, we picked some fresh asparagus and rhubarb from Andrews’ Scenic Acres farm in Halton Hills/Milton. I showed you the delicious Rhubarb & Strawberry Pie I made and now it’s time to learn the easiest way to cook asparagus. This sandwich is very tasty and perfect for a light and healthy meal. 5licious: Salsa Chicken with Mushrooms
It’s time to dust off my slow cooker for an easy and delicious Salsa Chicken. I don’t use my slow cooker very often as I’m not very comfortable leaving it unattended for so many hours as most people do. I agree is quite convenient to place all the ingredients in the slow cooker, go to work and come back to a meal. But, the main reason I like using it is that slow cooking at a low temperature helps retain the natural juices and allows for a better distribution of flavours. Hubby and I really loved this meal and the sauce was so delicious. I hope you’ll enjoy this recipe too!

5licious: Marinated Mushrooms
Marinated mushrooms are easy to make and very tasty. I must give my dad credit for coming up with this recipe. He’s been making these marinated mushrooms for a long time and actually he was the chef in the kitchen this time as well. I only took care of the pictures
. You can enjoy these mushrooms in so many ways! They are great as an appetizer for buffet style gatherings. You can have them as a light meal, use them in salads or as a garnish.

Veal with Mushrooms
This is one of the first meals I made in my lovely new kitchen
. It’s a simple yet delicious meal. I found the recipe here (and then adjusted to my taste). You can serve the cutlets with cooked potatoes, rice or salad. It’s the perfect choice for lunch or a light dinner.

Chicken Chasseur (Hunter-style Chicken)
Yet another quick and easy chicken recipe with mushrooms that tastes delicious. Chicken Chasseur is a French bistro classic that can be served with mashed potatoes. The tomato and white-wine sauce adds a great flavour to the dish. C’est magnifique!

Pork Tenderloin with Mushroom Stuffing
This is such a savory recipe with a moist and flavourful stuffing. I found the recipe on mushrooms.ca but I’ve modified it slightly by adjusting the ingredients to my taste (more mushrooms of course!) and adding white wine. Here’s the original recipe. We served it with mashed potatoes and my amazing Beet Salad.
