Baked Chicken with Mozzarella & Tomato Sauce
Summer and other plans are keeping me busy! I feel like I have almost no time to cook or blog. When I’m this busy, I usually make dishes with chicken. There are so many easy chicken recipes out there that it’s impossible not to find one that can get you in and out of the kitchen in no time. I’ve made this super easy dish about a week ago and we loved it. If you love chicken and mozzarella you should definitely try it out. We served it over cooked spaghetti.

Ground Beef & Pork Lasagna (my best lasagna so far)
Another great recipe from the Italian cuisine… although I must admit this version of Lasagna is more delicious than my other recipe for Lasagna with Chicken and Mushrooms. At least hubby was much more impressed with this one
. It’s not exactly the traditional Italian recipe as I’ve decided to combine ground beef and pork while Italians usually make it using beef only… correct me if I’m wrong. We really enjoyed the way it turned out so I highly recommend you try it at home too.

Lemon Tiramisu
You should really try out this recipe! It is very light and refreshing and a great alternative to the well-known tiramisu made of coffee-soaked biscuits and flavoured with cocoa. It can be served by itself with no other toppings but this time I’ve decided to make mini-cakes and cover them with homemade marzipan. It was my first time making and working with marzipan (read playing with), so be nice
