If it’s Easter, it’s time to decorate some eggs! Dyeing eggs with plants is fun and easy and the nice part about this is that every egg will be wildly different

I woke up this morning with a big smile on my face so I decided to make my husband laugh out loud too with this funny breakfast. Since everyone should be able to make sunny side up eggs I didn’t take step-by-step photos. The only picture I took though speaks for itself : )). Here are the ingredients I used:
I had some quail eggs left over after I made the delicious Salad with Smoked Salmon & Quail Eggs so I decided to try out a quick and easy breakfast recipe. I’m not going to start talking about the health benefits of quail eggs again because I gave you enough info in my previous post :) . I’ll just say that this is a very tasty breakfast. You can use cookie cutters to make different shaped toasts… I’m sure your kids will love that ;).

You can enjoy this easy and healthy salad anytime of the day. And in case you didn’t know, quail eggs provide great health benefits, whether cooked or raw. They are proven to be a great source of vitamin A, B1, B2, B6, B12 and D. Also, they are used to increase appetite, strengthen the immune system and can help treat gastritis, stomach ulcer, constipation, asthma and diabetes. My grandma passed away from lung cancer about a decade ago (still miss her so so much 
) but I remember she used to consume these little eggs raw in the morning on an empty stomach to help her immune system and to inhibit cancerous growth.
Oh and another thing is that even though they are so small their nutritional value is 3-4 times greater than that of chicken eggs and they also provide 5 times more phosphorus and 7.5 times more iron. I will start my list of recipes for this holiday season with these cute snowmen made of eggs. I used hard-boiled eggs, a carrot and some peppercorns. These snowmen are a very nice addition to your holiday appetizer platter. Oh and this will make eating eggs more fun for your kids as well

Spring is upon us and this is the best time to harvest and eat Nettle. Yes, nettles, those plants covered with tiny stinging hairs that produce an intense, stinging pain… ouch! Creamed nettles are a very popular and healthy dish during spring time in Romania. Nettles have the richest taste and are full of vitamins A, C and D, and minerals Iron, Potassium, Calcium and Manganese. Since in downtown Toronto would be kind of hard to find nettles growing wild and you can’t really find them at the grocery stores, I have decided to substitute nettles for spinach which is quite delicious and healthy as well. BTW I despised this kind of food as a kid or, better said, anything that looked green. This is a classic recipe that is extremely easy to make. We usually eat this with sunny side up eggs and polenta and believe me, this combination makes for a really filling and nutritious meal.

Deviled eggs are easy to make and so delicious. The basil pesto adds such a fresh flavour! Deviled eggs are very popular around Easter time in Romania. Usually if I have leftover dyed eggs after the Easter holidays (dyeing eggs is one of the most popular traditions in Romania), I always make deviled eggs. Since Easter is just around the corner, maybe you’ll find this appetizer a pleasant and tasty addition to your Good Friday menu.

When it comes to breakfast, poached eggs are my favourite. This past weekend I have decided to try something different so I made baked eggs in tomato sauce. You can quickly make the tomato sauce and either poach or bake the eggs in it. You can serve them with toasted bread or garlic bread. They are also prefect for lunch or supper when you want to whip up a quick meal.

This is one of my favourite desserts from my old recipe notebook. I’ve been making éclairs using this recipe for years and they are always a huge hit. Trust me, there is nothing more yummy than a homemade éclair!

There are many Crème Brûlée recipes out there and most of them use cream. Since cream is heavier and has a high fat content I prefer this recipe that uses milk … the custard has a great taste and fewer calories.
