I’ve had some cedar planks around since we bought our grill this summer and never used them. Today was nice and sunny so I thought this would be the perfect day for grilling and a good occasion to use those cedar planks to make grilled salmon (my husband’s favourite fish). These cedar plank-grilled salmon fillets are incredibly tender and have a nice smoky flavour from the cedar. In this recipe I soaked the planks in warm water but you could use white wine or apple cider to accent wood aromas and add a richer flavour to your salmon. You can serve the salmon with Roasted Vegetables.

For some unknown reason I never got overly excited about lobster… plus they are kind of ugly, they look like big cockroaches, don’t they?! A few years ago while vacationing in Cuba we had the chance to eat the most perfectly cooked lobster fresh from the ocean. We went on a boat ride and one of the Cuban guys on the boat caught a few huge lobsters. By the time we came back from our snorkeling session at the coral reef the table was loaded with lobster and fresh fruit that I couldn’t resist. This is my dad’s favourite dish and one of the very few recipes he prepares at home . It’s easy to make, delicious and needs to be served on weekends (you don’t want the garlicky smell to flood your office, right?!). We served it with a roasted tomato & garlic sauce and our traditional Romanian mamaliga (polenta). You can find the recipe for polenta here.

Oh, I made these so many times this holiday season and they were always the first appetizer to go. What can be better than a light appetizer with smoked salmon and cucumber with a touch of cream cheese when everywhere you go during this time of the year you find the traditional cabbage rolls (sarmale), roasted pork, pork jelly (piftie), sausages, and you name it… all kinds of dishes that are heavy on meat – delicious but SO heavy. So back to our healthy smoked salmon, did you know that in the mid 1800′s New York, especially Brooklyn, emerged as the fish-smoking capital of America? The first time I had aioli (or allioli) was last year when we visited some relatives in Spain. Aioli is a garlicky Spanish mayonnaise sauce that is usually served with seafood or fried fish. So it’s the perfect sauce for these oven-fried or breaded shrimp. Oven “frying” is a better and much healthier alternative to deep frying and it’s always our preferred choice.

Here’s the second pie recipe I promised to post. Tuna Pie or Empanada Gallega is a savory pie that is very popular in Galicia – a region in the northwestern part of Spain. It’s filled with tuna, onions, peppers and tomatoes. You can also replace the tuna with sardines, cod fish or chorizo. It’s a very tasty and hearty meal and very easy to pack for work or school.

This is a great way to prepare flavourful fish kebabs. Adding pineapple is a twist to the traditional way of making kebabs that I’m used to from back home. I bet my parents won’t like this recipe but I shall try making this next time they visit us from Romania. Back home most people don’t usually like food with fruits or sweet sauces, if it’s sweet then it’s considered to be a dessert; it took me a while to get used to this as well .

We eat fish quite often for two main reasons – firstly, we love it because it’s healthy and low in fat. Secondly, fish is great because you can make tons of quick and easy recipes with it. This Cheesy Fish Fillet dish is perfect for a quick dinner and is super tasty.
